I love when I find a really good K-cup deal on a favorite of mine. I love the Deidrich Coffee, which is the value priced line from Green Mountain. So that right there tells you it’s a good coffee! When my oldest was first born I used to drink these everyday. It was before Keurig brewers were out and I hated to make an entire pot of coffee for just me and I really only had one cup then because I like my coffee hot and with a newborn, nothing is hot anymore (coffee, food etc). So I would boil some water and have these. I loved it and drank them for a couple of years until I got my Keurig brewer. I will still drink them especially since they are super easy to make with the Keurig. I just heat up water and don’t add a K-cup to get the hot water. I especially love the French Vanilla one!
Doesn’t that look good? I think this would be something fun to put together with kids! And maybe if they aren’t strawberry and blueberry fans, they will be after this.
Fruit can be expensive and I’ve been trying to buy more and more of it but sometimes my budget doesn’t allow it. I love when the stores offer the Strawberries and Blueberries Buy One Get One Free and it’s really the only time I buy them, except when I shop at ALDI. I can usually get them each time I go because they cost so much less than my other grocery store! So putting together this cake above will cost you probably less if you purchase the ingredients at ALDI, compared to another grocery store.
Want the recipe? It’s a little time-consuming since you are working with Ice cream but I bet it’s so worth it when it’s made. I hope to try this one out this summer for sure! You could also skip the ice cream cake part and use a regular cake with white frosting.
Red, White and Blue Ice Cream Cake
Prep time: 10 minutes (plus 6 hours to freeze)
Total time: 10 minutes (plus 6 hours to freeze)
Servings: 10
Berry ice cream atop a cookie crust for an unforgettable patriotic dessert.
In a medium bowl, mash 2 cups of strawberries and 1 cup of blueberries. Add condensed milk, lemon juice and 2 cups of whipped topping. Mix thoroughly.
Line a 9-inch loaf pan with a piece of foil large enough so that it hangs over the edges.
Pour in berry mixture.
Stir cookies into the melted butter and spread on top of berry mixture. Fold sides of foil together to cover cake and place in freezer for 6 hours or until firm.
To serve, invert onto a plate, remove foil and spread with remaining whipped topping.
Slice remaining strawberries. Arrange remaining blueberries and sliced strawberries on top of cake in a festive pattern.
Freeze until ready to serve.
